I just wanted to show off a picture of my awesome dinner from the other night. I LOVE dressing!! I love the sage, celery and onion combo. But I wanted to translate that into a healthy meal so I created this acorn squash (steamed in the microwave) stuffed with a bread-free dressing.
It's mainly broccoli stalks (I almost never throw away the stalks, I chop them up and eat them!), celery, onion, sage, garlic, pepper, salt-free seasoning, and two vegetarian sausage patties crumbled up.
I dry roasted the veggies in my cast iron skillet on the stove, then added the sausage patties and stuffed away. Yum! It's everything I love about stuffing without the bread!
